Actually the original max stats on this gem was 375hp, 10ac when inserted into dwerium jewelry.
Currently I do not have it on a toon that is lvl 70 so I will have to wait to confirm. But I will repost when I have.

Mine are also showing 1ac/37hp UNmodified...it's like 24hp modified at level 43.

What level are you?
I think that the Unmodified setting doesn't know how to properly interpret the Jewelry now. Ngreth said that the new gems have a very steep rate of drop off till you get within 10% of the max stats at which point it is at the normal linear rate. My theory is that when you click unmodified that the client uses the rate of improvement for the item (which varies now for the gems but static at all levels for all other items) and uses that and your current level to calculate the stats for you. So at level 5, you would see a different stat value than you would at level 55 or 75.
Also that value is going to vary depending on what type of metal you have the item in.
