If you are grouped and 75, fire pet with blazing stance is a nuke-machine. Although I would not recommend him for soloing.
The mage class correspondant, an active tester, states that the earth pet is easier to heal - it will take less damage over all. However, "better" is very subjective. Do you want stuns on casting mobs? Root for runners?
Like Nova said, try them out, see what fits your style, and decide how you like to play. Personally, I haven't bought an earth or fire pet since level 20ish (level 75 now). The mages in my guild are split as well. Some only use air, couple mostly use earth, one who really likes fire.

The answer to that is subjective and situational.
Earth pet has more HP and roots.
Air pet mitigates better and stuns.
You decide.
