I heard a rumor that baking cannot be your main skill, that is it and one other skill can be raised to 250. Can anyone please confirm or deny.

Since PoP, you can train in New Tanaan Crafting Mastery, which lets you go past 200 in more than one skill.

Not sure where you heard this, but the first tradeskill to hit 201 locks the others to a max of 200. And as far as I know, Baking can be taken all the way to 250.
