WOW! I have to post my own correction. Instead of getting Crab Meat back, you get 1 lb. Saltwater Crab back, in the quantity based on the number of pounds the original crab was (which, is kinda...weird when you think about it). Then you have to take another step to make it into Crab Meat. Sorry, Saltwater Crab Meat.

For those who are perpetually confused as I am, this is used just like the 1lb. Saltwater Crab for baking. Just put it in the mixing bowl and combine. If you're successful you'll receive 2 Saltwater Crab Meat(s) instead of one when using the 1 pounder.
As far as I know, you cannot craft Saltwater Crab meat as is stated on the 1lb. Saltwater Crab page in Allakhazam.
